Soups are a cook's way of showing you they care for you. The piping hot bowls of comforting liquid that you can easily sip are meant to not take any toll on you. Even eating chewing might be too much effort so when you're presented with soup, be grateful to the one who serves it. 

That's why soup is the common dish served to those who are feeling less than perfect. However, sometimes soup can be less than filling. When this is the case and you want something more substantial to fill your tummy, a heftier, creamier soup is just what the doctor could have ordered!

That's where dried mushrooms can be the surprise as well as the secret ingredient. Drying mushrooms actually concentrates their flavor which is why you not only need to rehydrate them but you also want to save the water it was in. Once dried mushrooms are reconstituted, you get more flavorful, aromatic mushrooms, plus an umami-packed mushroom broth to use as a base for your soup.

Green peas may not have a great reputation as a vegetable but that's probably because the green peas we have are commonly frozen peas. While these should be almost good as fresh, few take the time to really cook these until softened.
