Jump to RecipeI think I probably speak for a lot of bloggers. We spend so much time trying to be creative and making such intricate recipes. We need to remember that we started our journeys with a love for cooking and a love of food. Well I know I did. I have to remind myself that good ingredients make any recipe good.

So I just looked to see some of my “easy” recipes. I may have not done a lot of these but I have quite a few. Some of the easy recipes I have made that I like include:

These Easy Feta Pita Pizzas were created for 2 reasons: First, my wife totally loves feta cheese. I mean loves feta. She will put it on or in anything. And second, I had a whole bunch of pitas leftover from a dinner party we hosted. Rather than freeze them, why not use them to make pizzas. Pitas are a perfect base. They hold up so well. The key is to crisp them up, and then, add the toppings. The pizzas are finished by adding plenty of cheese and grape tomatoes and after baking, topped with fresh basil.

Easy Feta Pita Pizzas
Ingredients
- 4 Whole Pitas
- 8 Ounces Feta
- 4 Ounces Grape tomatoes
- 2 Ounces Fresh basil chiffonade
- 1 Tbsp Olive oil
- 1 Tsp Salt
- 1 Tsp Black Pepper
Instructions
- Begin by heating the pitas in a 325 degree oven for 3 minutes. Remove from oven and top with and add the feta and the tomatoes. Add back to the oven, and cook for another 4 – 5 minutes. Remove from the oven and top with the basil, salt and pepper. Finish off by drizzling the olive oil. Serve and enjoy!
