Roasted Asparagus – a simple quick and easy side dish of fresh asparagus with a little olive oi, salt and pepper. Roasted to golden brown perfection that goes with just about anything!
When I was growing up the vegetables we had at dinner were almost always from a can. It was often canned corn or canned green beans. It wasn’t until I was pretty much out of the house before asparagus or other fresh vegetables started to make an appearance.
I am pretty sure it was because my parents grew up with steamed asparagus and steamed Brussel sprouts and hated them. But once you learn what roasting can do, it is a whole new world of vegetable love!
Asparagus season is in the spring, but you really can find good fresh asparagus in the grocery store year round these days. I have never used the frozen asparagus for this recipe, but if you try it or have used it, let me know how it works.
What You’ll Need
- Fresh Asparagus
- Olive Oil
- Salt
- Pepper
Yes, it is that simple! You can mix it up and add lots more flavor with different herbs, Parmesan cheese, garlic, or lemon juice. But I like to just keep it simple, and then if I am in the mood for more, I can add it to this base recipe.
How To Store Asparagus
When you buy it at the store, it usually comes in a bunch with a rubber band at the top and the bottom holding it together. If you aren’t going to use it in 1-2 days the Pro Tip is to store it in a glass of water. If you have a mason jar, they usually work really well for the sizing. Simply add about 2 inches of water in the bottom, put the asparagus in the jar and store in the fridge. It will last longer this way and still be fresh and the stalks will remain firm.
How To Trim Asparagus
As you can see, this asparagus has a very thick and woody looking end. That isn’t something you want to roast up and eat. The easiest way is to hold up the asparagus, and bend it in half. Where it breaks is natural place where the woodiness ends. Discard the ends, and keep the green part.
How To Make Roasted Asparagus
- Once you have your trimmed asparagus arrange it on a rimmed baking sheet.
- Pour over the olive oil and season with salt and pepper. Toss until everything is well coated.
- Place in a hot oven for 20-25 minutes. How thick your asparagus are will determine how long it takes. Also, if you like yours more done just add 5-10 more minutes.
- Remove from the oven and serve immediately.

Ingredients
- 1 pound asparagus trimmed
- 1 Tablespoon olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400º F.
- Place asparagus on a baking sheet. Drizzle olive oil over the asparagus. Sprinkle with salt and pepper. Toss to coat.
- Bake for 20-25 minutes, until roasted and golden brown. If you like it crispier add 5-10 more minutes.
