Throwback Thursday: Black Beans

Instant Pot Chipotle Beans

Romeo and Juliet. Lizzie Bennet and Mr. Darcy. Westley and Buttercup. Beans and a pressure cooker.

I bought a pressure cooker – a stovetop cooker, way back before electric cookers took off – because it was a cool cooking gadget. Dried beans, pressure cooked in about an hour, are why it isn’t collecting dust on the back shelf, next to the Asparagus steamer and the stack of egg rings.

I still make beans in my Instant Pot about once a week. More often than not, it’s a pot of black beans. I save the leftovers in the freezer, so I always have some beans ready to go if I need them. (And, something about freezing makes them break down a little easier for refried beans.)
