This tomato onion salad is a staple in our kitchen over the warmer months. The recipe is insanely easy to make and all you need is 10 minutes!
And the recipe only calls for very basic and budget-friendly ingredients. When tomatoes are in season, I love to use my own tomatoes from our garden. Make sure to use ripe tomatoes for the best flavor.
For the dressing, I used an easy combination of balsamic vinegar, olive oil, fresh lemon juice, salt, sugar, and black pepper.
Freshly chopped parsley adds a lot of flavor to this tomato salad and it’s also super healthy and it’s rich in iron and vitamin C.
I know this is a very basic recipe, but it’s just packed with flavor and goes well with so many dishes. And the recipe is very flexible and you can easily add or swap ingredients (for example basil instead of parsley).
We absolutely love this easy tomato salad in the summer, but it’s delicious the whole year round!
What Goes Into This Recipe
- Tomatoes – large tomatoes. Make sure they are ripe and perfectly red.
- Olive Oil – I recommend organic, extra virgin olive oil for the best flavor.
- Balsamic Vinegar
- Parsley – use freshly chopped parsley. The recipe will also work with frozen parsley, but it tastes much better with fresh parsley.
- Red Onion – it’s crunchy texture and mild flavor makes it perfect for salads.
- Lemon Juice – use fresh lemon juice
- Sugar – just a pinch for the perfect flavor.
- Salt & Pepper
How To Make This Recipe
1. Step: Wash and dice the tomatoes. Finely chop the parsley and the red onion. Juice the lemon.
2. Step: In a small bowl, combine all ingredients for the dressing.
3. Step: Place all ingredients for the salad in a large bowl, add the dressing, and stir well.
Recipe Notes
- You could also replace the large tomatoes with cherry tomatoes for a change. Cherry tomatoes are usually even more flavorful because of their smaller size.
- The salad is also great with fresh basil instead of parsley.
