I love seafood and eat it very often. I also to like meals that are quick and easy. This Jerk Salmon with potatoes, green beans and asparagus only took about 30 minutes to make.
What you need:
Salmon
Green beans
Asparagus
Potatoes ( You can use Irish or Sweet Potatoes)
Seasoning for Salmon: My homemade Jerk sauce/marinade, a pinch black pepper, 2 tsp garlic powder, 2 tsp Maggie all purpose seasoning.
Step 1
Pre-heat oven to 350 degrees Fahrenheit. Wash and dice potatoes. Line a baking sheet with foil and drizzle a little oil on it. Place potatoes on baking sheet and season with salt, black pepper and Italian seasoning. Bake potatoes for 20 minutes.
Step 2
Season the Salmon with black pepper, garlic powder, Maggie all purpose seasoning, then place jerk sauce/marinade on top to cover the Salmon. After the potatoes have been cooking for 20 minutes, remove from oven and place the Salmon on top of or beside the potatoes. Melt 2 tbs of butter and pour over Salmon and potatoes. Return the baking sheet to the oven and bake Salmon for 12-15 minutes.
Step 3
While the Salmon is baking, bring a pot of water to a boil. Cut green beans and asparagus. Was them and place them in the boiling water for about 4-5 minutes. Drain water, add 1 tbs of butter, 1 tsp of garlic powder, a pinch of black pepper and some Italian seasoning to the vegetable. Stir to properly coat he vegetables.
Serve while warm. I love having my Salmon with white wine. You will love this recipe as it is easy to make and it doesn’t take a long time to prepare either.
