Vegan Birthday Cake? Say no more

You don’t want to come empty handed to your friends brithday-Party? I have the perfect solution for you then. Bake a cake. But how can you make one without using dairy and eggs? Very simply I’d say. Just read the recepi below.

Ingredients

  • Cake base (information per base)
  • 200 g flour
  • 25 g cocoa powder (unsweetened)
  • 150 g sugar
  • 250 ml sparkling water
  • 50 ml vegetable oil (canola or sunflower oil)
  • 15 g baking powder
  • 8 g vanilla sugar
  • 1 tablespoon vegetable butter (for greasing)

Vegan cream

  • 200 g vegetable cream for whipping
  • 8 g cream stiffener
  • 100-200 g vegetable curd cheese or skyr
  • 1-2 tablespoons agave syrup

Toppings

  • 100 g blueberries
  • 100 g raspberries
  • 100 g blackberries
  • dried blossoms for decoration

Preparation

First of all, we bake the cakes, which we can stack on top of each other at the end. To do this, we repeat the following steps three times. In the end, we get three identical looking chocolate cakes, which we let cool completely.

In a bowl, mix the flour, cocoa powder, sugar, vanilla sugar and baking powder.
Add the sparkling water and oil and mix until smooth. Stir the dough only as long as necessary.
Grease a round cake pan (diameter 22 cm) with the vegetable butter and, if necessary, line the bottom of the pan with baking paper.
Pour the batter into the pan and bake at 180°C for about 40-45 minutes. Check with a stick test if it is cooked through. If the dough gets too dark, cover with some aluminum foil. Then let it cool completely.

Mix the cream

For the cream, whip the vegetable cream with the cream stiffener.
Now mix the whipped cream with vegetable curd or skyr or yogurt and sweeten it a bit with agave syrup. The cream should firm up well and not be too runny. Store in the refrigerator until you use it.

Serve

Place the first chocolate cake on a plate or cake platter and top with some cream. Don’t use too much! Due to the weight of the other cake, the cream will be pushed neatly to the edge once again.
Continue like this until all chocolate cakes have been spread with cream.
Wash the berries and decorate the cake at the end with lots of berries and dried flowers.
